Beurre Blanc vs. Brown Butter
If you read the previous post on mother sauces, specifically on hollandaise, one of the five French mother sauces, you may have said to yourself, "man, I like butter, but, that's a lot of butter!" Yes, yes it is. Hollandaise is a RICH sauce and certainly does highlight the flavors of butter. But, for some, it can be a bit... too much. But, don't fear. There are butter based sauces you can make that are "lighter" on the palate and your waistline. Beurre blancs are a much lighter butter sauce. Literally translated from French as "white butter"— a buerre blanc is a hot emulsified butter sauce made with a reduction of vinegar and/or white wine and shallots into which cold, whole butter is blended, off the heat to prevent the sauce from breaking, with vinegar and aromatics to create an amazingly light butter sauce. I love beurre blancs on fish, seafood and veggies. They are super easy to make, literally taking minutes to cook up, and will elevate any dish. A brown butter sauce consists of one ingredient...butter. But, to make it you’ll need to be conscious of your technique. In a brown butter sauce you are looking to separate the milk solids from the milk fats, without burning the milk solids. So, start by melting butter, then over lowered heat you cook the butter until the milk fat slightly browns. Brown butter, unlike ghee is not strained, so the milk solids will stay on the bottom. Some note a deeper, richer, nuttier flavor with brown butter (over ghee) because the solids remain in the sauce rather than being removed. Try brown butter on your next steak, you'll thank me.
